Spinach mint rice

Loaded with the fresh flavor of mint and spinach leaves, this colorful and nutritious green rice serves as a complete meal. Goes well with yogurt or raita or salad as a side dish.

 

Ingredients:

  • 2 cups basmati rice
  • 100 gm spinach
  • 1 cup mint leaves
  • 2 onions sliced into thin strips
  • 1 tsp grated ginger
  • 1 tsp chopped/crushed garlic
  • 2 whole green chilies
  • chopped coriander leaves for garnishing
  • salt to taste
  • 1 tsp garam masala (allspice powder)
  • 2-3 tsp mustard/sesame oil

Method:

Cook basmati rice and let it cool. Wash and blanch spinach and let it cool. Wash mint leaves and transfer them along with the blanched spinach to a mixer. Add green chilies and a cup of water and grind into a fine paste. In a cooking pan, heat the oil, add onions and garlic, fry till brown in color, add ginger, and mix. Now add the spinach and mint paste, salt and let it cook for a minute. Add rice, garam masala and mix well. Garnish with coriander leaves.

Mint, gooseberry and apple juice

Loaded with vitamin A and vitamin C, this sweet and sour green juice is healthy and refreshing.

Ingredients (for 2 glasses of juice) –
1 cup of washed mint leaves
1 Indian gooseberry
1 apple
2 glasses of water
Black salt to taste (optional)

Method
Cut the Indian gooseberry into big chunks and remove the center seed. Cut the apple too into big chunks. Blend all the above ingredients well. Strain the juice with a strainer. Add black salt, if desired. Enjoy the refreshing green juice!

  

Spinach and mint green juice

Loaded with iron, vitamin A, vitamin C and potassium. Spinach and mint juice is refreshing and has great health benefits.

Ingredients (for 2 glasses of juice)
1 cup of washed spinach leaves
1/2 cup of washed mint leaves
1/2 tsp grated ginger
2 glasses of water
Lemon juice
Salt to taste preferably black salt (optional)
1 tsp chaat masala (optional)

Method
Blend spinach, mint, and ginger with water well. Strain the juice with a strainer. Add lemon juice, salt, and chaat masala. Enjoy the refreshing and healthy green juice!

Spinach mint barley

A flavorful nutritious one-pot barley meal that is packed with vitamins, fiber, potassium, and proteins.

Ingredients: (Serves 4 people)

  • 2 small cups barley soaked overnight
  • 2 onions chopped
  • 2-3 tomatoes chopped
  • 1 medium bunch of spinach
  • 1 small bunch of mint leaves
  • ginger garlic paste
  • 1 green chili chopped (optional)
  • spices – 1 tsp turmeric powder, 1tsp coriander powder, 1/2 tsp garam masala powder (allspice)
  • 1 tbsp mustard/sesame oil
  • salt to taste

Method:

Wash the spinach and mint well, add them to the mixer and make a puree with a little water. Add oil to the cooker. Let it heat, add onions and fry till brown in color. Add ginger garlic paste and spices except for garam masala powder. Add tomatoes and cook well. Add the spinach mint puree, soaked barley, and salt. Mix well, add around 2 glasses of water and close the lid. Let it whistle 5-6 times on a medium flame. Switch off the gas and let the cooker cool completely. Open the lid, add garam masala powder, mix well and serve.
